Cranberry Bread Recipe - One of the Best!



I'm sticking with the cranberry theme this week.  Here's one of my favorite recipes.  Easy, delicious, and healthy! 



Cranberry Bread

2  cups all-purpose flour
3/4  cup sugar
1-1/2  teaspoons baking powder
3/4  teaspoon salt
1/2  teaspoon baking soda
1/4  cup butter or margarine
1  tablespoon grated orange peel (use fresh if possible)
3/4  cups orange juice
1  egg, slightly beaten
1  cup fresh or frozen cranberries
1/2  chopped nuts (walnuts or pecans)

-Heat oven to 350.  Grease bottom only of loaf pan.
-In large bowl, mix flour, sugar, baking powder, baking soda, salt
-cut in butter until mixture is crumbly
-stir in orange peel, orange juice, and egg just until dry mix is moistened - don't over-stir
-stir in cranberries and nuts, and spread entire mixture in pan
-if desired, sprinkle some sugar lightly over top
-cook at 350 for 50-60 minutes, until a wooden toothpick inserted in center comes out clean
-cool 5 minutes in pan, then loosen sides and remove

Supposedly (and I won't swear on this!), there are only 100-120 calories per slice.  So I say add whipped cream, or ice cream, or a nice steak...

Cool trick:  Use cold butter, and instead of adding it whole, use your cheese grater (medium setting).  The butter, now in flakes, blends easier and more evenly throughout the mixture.  This works great for pie dough, too!
